Traditional Vegan Scottish Tablet Recipe

If you love really sweet confectionary like fudge, you will probably love Scottish tablet, a sweet not dissimilar to fudge.
Unlike fudge, it has a slightly firmer, grainier texture, but still has a melt-in-the-mouth buttery, creamy flavour.
It is made with the old-fashioned, traditional method of boiling sugar, milk, butter and condensed milk, generously flavoured with some vanilla extract. Once the mixture reaches temperature, it is then removed from the heat and beaten vigorously. This motion helps to give the tablet its unique texture.

Ingredients

Instructions
Place the sugar, vanilla, salt, milk and butter into a large, heavy bottomed saucepan and gently heat until the sugar has melted. This might take 10 minutes or more, so be patient.
Now add the condensed milk, stir well and bring to a rolling boil.
Boil until the mixture reaches soft ball stage (between 234 and 240°F (112 and 115°C). Again, be patient and keep stirring.
Remove from the heat immediately and beat the tablet with a wooden spoon until it starts to thicken, about 4-5 minutes. You can use an electric whisk for this.
As soon as the mixture starts to thicken, pour into your lightly oiled dish and leave to cool.
Carefully bang the dish to remove any air bubbles.
Once cooled, remove from tin and cut into squares.
Storage
- Tablet will last for ages if stored in a tin.
Top tip
If you are planning on making this to give has gifts, I recommend buying a candy thermometer to ensure that you boil the tablet to just the right temperature.

- 1 cup Soya milk - or plant based of your choice
- 60 g Butter - vegan
- 1 teaspoon Vanilla extract
- ½ teaspoon Sea salt
- 370 g Condensed milk - vegan

- Boil until the mixture reaches soft ball stage (between 234 and 240°F (112 and 115°C). Again, be patient and keep stirring.
