Vegan Scottish Tablet Recipe

Equipment

  • 1 Candy thermometer
  • 1 Large heavy bottomed saucepan
  • 1 Baking dish, 9" x 7", greased

Ingredients

  • 900 g White sugar
  • 1 cup Soya milk - or plant based of your choice
  • 60 g Butter - vegan
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Sea salt
  • 370 g Condensed milk - vegan

Instructions

  • Place the sugar, vanilla, salt, milk and butter into a large, heavy bottomed saucepan and gently heat until the sugar has melted. This might take 10 minutes or more, so be patient.
  • Now add the condensed milk, stir well and bring to a rolling boil.
  • Boil until the mixture reaches soft ball stage (between 234 and 240°F (112 and 115°C). Again, be patient and keep stirring.
  • Remove from the heat immediately and beat the tablet with a wooden spoon until it starts to thicken, about 4-5 minutes. You can use an electric whisk for this.
  • As soon as the mixture starts to thicken, pour into your lightly oiled dish and leave to cool.
  • Once cooled, carefully turn out from your dish and cut into squares.

Please note that where the recipe asks for milk, butter or yogurt, this refers to any plant-based version that you prefer.
