This was scrumptious. I used maybe 1/2 tsp of coconut oil instead of the olive oil. I added 1/2 tsp tangerine zest that had been rehydrating some piloncillo. Soaking the dates was a great suggestion. It was easier than I thought to make, and it was more delicious than I thought it would be. The sequential steps in your instructions were skillful and effective for me. I will be taking this to a vegan pot luck tomorrow. kudos!

Eccles cakes were a distant memory from my childhood….many thanks for this recipe……I adapted it a bit…..coconut oil with a pinch of salt instead of vegan “butter”….. currants , diced dates and a tablespoon of unsweetened coconut for the filling.

I don’t think you need to adjust the quantity of yeast, just the rising time. If you have access to vitamin C powder, I believe that adding a pinch is all that is needed to turn your dried yeast to the quick stuff.
