Equipment

  • 8" lined Brownie Pan
  • Blender or Smoothie Maker

Ingredients

  • 1 15oz (400g) can Cannellini Beans, drained
  • 8 tablespoon Rapeseed Oil
  • ½ cup (110g) Brown Sugar
  • ½ cup (120ml) Vegan natural Yogurt
  • 1 tablespoon Coffee Granules
  • 1 teaspoon Camp Coffee (or coffee extract)
  • 1 teaspoon Vanilla Extract
  • 1 cup (130g) SF Gluten-Free Flour
  • ½ teaspoon Salt
  • ¾ cup (100g) Sorghum or Millet Flour
  • 1 teaspoon Baking Powder
  • 1 cup (150g) Chocolate Chips
  • ½ cup (50g) Chopped Walnuts

Instructions

  • Preheat oven to 180c
  • In a blender, whizz up the beans, oil, brown sugar, yogurt, coffee and
    vanilla extract until smooth.
  • Sift the flours and salt into a large bowl.
  • Stir the liquid ingredients into the dry until just amalgamated
  • Fold in the nuts and chocolate chips.
  • Pour into your prepared dish and bake for about 25 minutes, or until a
    toothpick comes out clean.
  • These brownies are not a cakey texture, they are dense and almost
    fudgy. They will keep for ages in the tin and can be dressed up with a
    little drizzled melted chocolate if you like.
