Vegan Quince and Cardamom Tea Loaf

Equipment

  • 1 1 lb loaf tin lined

Ingredients

  • 110 g wholemeal flour
  • 100 g plain flour - white
  • ½ teaspoon salt
  • ½ teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 55 g butter - softened, vegan
  • 85 g brown sugar
  • 150 g quince puree - unsweetened
  • 30 g sultanas
  • 115 ml yoghurt - plant-based
  • ¼ teaspoon cardamom powder
  • 1 tsp vanilla extract
  • 90 g walnuts - chopped, optional

Instructions

  • Cream the butter and sugar until fluffy
  • Add quince puree and vanilla extract and mix well.
  • Whisk the flours with baking powder, bicarbonate of soda, salt and cardamom
  • Add the flour to the creamed mixture alternately with the yoghurt
  • Stir with a metal spoon until just combined.
  • Spoon the mixture into a lined loaf tin.
  • Bake at 200c for 40mins or until a skewer comes out clean

Please note that where the recipe asks for milk, butter or yogurt, this refers to any plant-based version that you prefer.
